Fruit cake without baking for a perfect acid-base balance
Simple recipe for a vegan cake with stevia
Do you feel tired and overwhelmed? Do you have a funny taste in your mouth? Perhaps these complaints are due to the imbalance of your acid-base balance. We've already written a few things about the great benefits of basic foods. Especially fresh fruits and vegetables belong to this group of foods.
Sugar, coffee and alcohol should be avoided. But what about sweets? Do not worry, you can eat just as much as we used to. How can this be possible? This goes especially with the healthy sugar substitute Stevia, which has recently been widely used in Europe. In the meantime you can buy Stevia not only in the organic shops, but also in the supermarket. Stevia is available as a powder and in liquid form. The stevia plant contains eight different glycosides. The most important of these is the so-called stevioside. This glycoside is much sweeter than a sucrose concentration of 10% and has 1/300 of the calories of conventional sugar. Although stevia is temperature stable and suitable for cooking and baking, it actually has the disadvantage of being quite difficult to dose. You have to pay attention. If you dose incorrectly, you run the risk of your cake tasting either bland or almost bitter.
Garnish with fresh, edible flowers and nuts
We would like to help you with this and have a light recipe for a basic cake without baking ready for you today. This is a cake that is completely different from what you may have known from your childhood. Ingredients such as sugar, milk, flour and eggs that over-acidify the body are simply left out here. What comes in their place? Valuable nuts, dry and fresh fruits and, of course, stevia. You can make this cake with almost any kind of fruit. It is a beneficial source of nutrition for your body and a heavenly pleasure for the senses. The preparation is very easy and also a lot of fun.

Ingredients for the topping:
- 100 g of fresh fruit (depending on taste and season) raspberries, strawberries, blueberries, etc.

- 100 g strawberries, halved
- 50 g coconut flakes or almond slivers

Remove the kernels from the dates and puree them. Knead the dates together with the almonds and the orange juice to a dough and form out of it the round cake base (about Ø 20 cm, 1.5 cm high). Then place it on the cake plate with which you will serve the cake.
step 2
Mix the 100 g fruits and the four dates with the 2 tablespoons stevia granules. If you get a fruit sauce from it, distribute it on the cake bottom.
step 3
For the decoration of the fruit cake use half strawberries and grated coconut. Alternatively, garnish with almonds. With this simple basic cake you save the baking time and can serve it immediately. You can enjoy it lukewarm or chilled. Good Appetite!
